My own creation of what I call Salad Cereal

All vegetables and fruits are organic and washed before preparation starts - this takes about 15mins to make and will get you through the entire week:

Ingredients:
1 apple
2 hand full of over night soaked almonds
3 hand full of roasted sunflower seeds
1 can of chickpeas/garbanzo beans 
1 cucumber
1-2 carrots (depending on size)
2 tsp of Amie's Goddess dressing

Chop all vegetables and the apple in small bite sized cubes or slices. While you chop them roast the sunflower seeds in a normal sized pan on high heat without putting any oil or anything else in the pan. When the seeds start sizzling and crackling toss them around in the pan to roast them also on the other side. It is up to you how roasted you like them.

Place the vegetables and the apple, once chopped, in a BPA free plastic or a glass container with a lid, add the almonds, chick peas and the sunflower seeds and drizzle the dressing on the mixture. Stir gently and store in the fridge with the lid on tightly for 4-6 days. 

This mix makes a great combination with any leafy greens. I like to take a container in the morning, place some MachĂȘ Rosettes or baby spinach on one side of the container and fill up the other side with the salad cereal. Once lunchtime arrives, I add a tiny bit more dressing in the leaves and ta-da - super healthy, protein laden power lunch which will leave you fully nourished, light and energized for the rest of your afternoon! No full-belly nap required! Boom!
